And I start thinking what come to people's mind with egg? ... chicken, white, yellow, oval shape, sunny side up-yellow center white circle.... How people gimmic egg? By shape of oval shap, by taste & texture, by color of yellow, white & clear egg white....
With relationship, during walking street, during working in chef coat, VISUAL is one of the primary important thing in life 24/7. I want to look sharp and so is my fuckin' dishes!! I cannot stand boring ugly presentation dishes!! Visual comes first in the dining room when foods are served. Everything smell, taste, texture, sounds(if the dish have some pop sound) and other elements are important, but visual first and must!
As usually I start working on my dishes from visual side. Swanky sexy egg... but same time I want something simple, keep it crystal clear the fact " Egg is star and other garnishes are supporting actor." Since we get beautiful green eggs from Mr. & Mrs. Andraki, I thought we should present shell somehow. Left of the ideas came to my mind in seconds.
Serve with egg shell, what's inside? > poached egg! > Serve with.... Puree! > two puree make sunny side up! > kinda saw somewhere before like mango puree and coconut, how I can stand out and take next level? > egg, egg, egg, chicken? no, egg have to be prom queen... egg? bird nest! > crunchy crispy chinese noodle make fake bird nest > put on top of sunny side up, so people can see through from top! and drop poached egg on top > wanna sexy up > decorat nest with green and other color... > egg with... bacon... and potato! different color of poatato, micro! Breakfast combo!! Etire dish concept came so quick.
