Black & White '10 pt.I




Once something chef Laurent Gras told me, I recall..... He made dish of tomato, watermelon & beet and Said "This dish is inspired by summer collection of dior." Yes, obviously new dish ideas could come from anywhere like I said on previous post. Fashion is definely one of the best resource to get inspired because both foods & fashions have a lot in common. They both are deeply reflect the color of the season, textures are great accents and also unique design, structure and shape attract people's mind. Over years I've been writing down the words or phrases which I want to use as name of my dish on my notebook, now there're hundreds of them. And one of them is called "black & white" I can't recall when I wrote down, no idea, long ago for sure. Wonder how and when it comes up...

Let's see.... If you say black and....?, I'll answer "white!!" I think black and white is perfect color match and actually those two are the my two favorite color to wear. Probably 60% of my clothes are black, white or grey! To me black & white is the coolest color combination and just simply best!

So it is simply so natural I have been thinking over years to make dish called "black & white". I have been making list of ingredients divided by colour. For example green: spring veges, granny smith skin, pink: grapefruit, rhubarb, brown: shitake mushroom, sweet potato skin...... list of colors and hundreds of ingredients, the list has been great resource to make dishes when the dish idea comes from graduation and combination of clours on the plate.

For opening RM upstairs, we decided to use nantucket scallop for first course. When I heard we gonna do scallop dish on the menu, right away I thought is "white!!!!!!!!!! this is time to do "black & whtie"!! " The process developing "black & white" was truely fun, but same time the most hardest dish to complete out of four dishes I made for RM upstairs....
