Spring Willow Ball

One day it was slow night, so I start thinking & playing for spring menu for RM upstairs with blank vision.

First I made half sphere shape somen dome, just spin off of "egg, bacon & potato". And start thinking about spring...... grab some spring vegetable from working and made snow pea donut with mold, then cover with somen dome. After that I put shaved asparagus and pencil aspargus.(2nd pic fr top) I kinda like how it looks I call it "aspargas rocket".

Then suddenly something click my head, thought I should make willow ball(3rd pic fr the top), it will be sick! I think home decor is always full of inspiration for plating. I love going place like pier 1 imports or crate&barrel, very inspiring. Yes, willow ball, when I was in SF, I had one for my room.

So... spring willow ball... first I made the sphere shape chicken mousse and wrapped with snow pea & snap pea. Then put it in somen willow ball and stick micro bok choy and asparagus.... name it... "spring gardener's ball"(4th pic fr the top)

Then... I decided to make lamb tartar since it's spring. Made with pickle kumquat, edamame, English pea and cashew nuts. ( thought something else, I forgot already!!) pit it in somen willow ball and garnsihed same way as spring gardener's ball. Present with pickle baby artichoke and pistol.... Not bad for playing in slow night, isn's it???
