Egg, asparagus & serano






So... here is the dish called "Egg, asparagus & serano". As you can imagine from the name, this is spring version of "Egg, bacon & potato". First off for fake egg sunny side up, I made white asparagus puree and green asparagus spinich puree. Then for top garnish I made dehydrated asparagus "paper". Nothing special, but thinly slice asparagus and roll in chopstick, hydrate for couple hrs. It make kind of funky tornado shape.

Other garnishs are thinly slice jamon serano, blanched pencil asparagus, chervil and micro chive. Conpared with old egg dish, this version is more vivid, have nice combination of colors, pink, green and white. Very springy!
