UK.... Compared with the countries I visited, UK hava a big plus which is......... English is the major language!! This difference is huge to me. As long as just work as a cook, probably I can go anywhere and just COOK!!! I did it when I went to Australia first time and Paris, just made it happen! But right now I'm basically looking for management position, so my language need to be business level to get done order, managing, talking with purveyrs and other office work. So honestly I thought I have no chance to get sous-chef offer in Europe but UK, Ireland and Scandinavia.

Now... London, Honestly I didn't have a good image in London culinarly scene. UK culinarly scene.... I staged Gordon Ramsay in NY once and chef Laurent Gras told me once his best meal is dinner at Fat Duck!! and........ what else UK....... fish & chips!! Well, that's pretty much all I can say about british culinarly scene saddly! But I'm talking about London, if NY is a city of N/S America, Tokyo is a city of Asia, then London is city of Europe all over! It gonna have to have some restaurants!!

Regional dishes... fish&chips, black pudding, beef Wellington, Jellied eels, British piccalilli... not so much, but I would say it may be more interesting to see contemprary restaurant & gastro pubs, I'm sure their approach must be a lot different from American, I'll see....
