8/01/2010... about one year ago from today, I left the the U.S. and start touring Europe..... it is called CJWDT'10 European tour. And exactly one year from the date, 8/01/2011 I'm going to leave the U.S...... again!! Life never go as plan and hard to imagine indeed. 8/01/2012 where I'm gonna be??? No idea, I mean maybe Asia, Europe, Oceania, the U.S..... or could be ANYWHERE!

Anyway... since I got fired from Coi restaurant, I asked myself what I'm gonna do and what I want to do. I had many options, stay in SF and find new job, go somewhere in the U.S. or hit the world to find new job. One country came up to my mind.... seriously I say 3 mins after I lost my job!! I know how it sounds crazy, but this is the damn truth. And the country is .......Singapore!

These years Singapore becomes one of the hottest destination in culinary world. There're some local talents and also big names from the U.S., France, Australia and Spain. Soon or later Singapore has been one of the culinary destinations I must work!! So... I don't know this time I can get something or nothing, but I felt it worth to go to see the culinary scene and make connections for the future opportunities. I'll fly to Singapore on August 1st.

My plan is simple and plain: staying in Singapore for 3-4wks, knock the doors and see what happens. Without saying I'm so stoked to see local markets, find new ingredients and try local dishes!! Anyway.... if I don't get anything in Singapore, my plan A would be Singapore > Kuala Lumpur > Bangkok > Saigon > Hong Kong, kind of small CJWDT'11 Asian tour. But I want to find my job ASAP and my budget is about 1/4 of what I had for CJWDT'10, so I may change my plan. I also have secret plan B & plan C on going, but the best would be I find "right job / right opportunity" in Singapore. The worst case is going back to the U.S. Oh, please no......
