It has been nearly 2 months since last post. I felt really regret that this blog has been dead last couple months. Why it happened? The reason is simple, I was not going well working at Coi restaurant unfortunately. And as of June 25th I got resigned from Coi restaurant.
After cooking years and years, all chefs build own culinary style, food philosophy and career plan. As I posted previously on this blog, I have my own. I know what I want, and have no interest in anything other. My goal is not working best restaurant in the world or making best dish in the world. It means nothing to me. I do what I want to cook, that's the most important. I don't care what people say honestly! And in my career I'm looking for right place where I can learn what I need to learn.
Say: I spent one year working at RM seafood in Las Vegas, and it's not Robuchon or Twist by Pierre Gagnaire. I'm not saying which restaurant is better, but unfortunately nobody knew RM seafood in Germany, Denmark and Japan. But is it matter? Not really, I can say one thing. I had a great opportunity to learn so many things at RM seafood. I would say I'm truely honored to be the part of the team and believe I made right decision to work at RM seafood. I could learn what I need to learn and it was priceless experience.
And... about Coi restaurant..... It is an amazing restaurant without no question. Chef Daniel Patterson is one of the most passionate chefs I ever met and I had a very inspiring experience at Coi restaurant. But... unfortunately I felt several problems with the restaurant and eventually I couldn't focus and motivate myself in the kitchen.. It was not right opportunity for me, so I think it was best for both myself and Coi restaurant.
Here, I would like to say the best luck to Coi restaurant and also say big thank you to chef Patterson and team for having me!!
Now... I'm exciting to seek out new opportunities. Last 2wks I was working on my new battle plan. I'll talk about the details on next post. Culinary metal vagabond, destination anywhere....
