
Time flies, it has been over one year since I posted my last agenda... To opening my restaurant "Passion. Spirit. Inspiration." on 2018, what I'm up to next 7yrs? As I mentioned previously, if I really want to be successful to open my restaurant in Australia. I should be in Australia already to do "research" and "study" on the food scene, guests, cultures, season, ingredients, purveyors, all the local sources, culinary community and others. But I've been saying I want to travel, live and work around the world next 5-6 years before moving to Australia.
Honestly I really think this is stupid idea, but even I regret later in my life, I decided to live "the moment", care about the present happiness, not about the future 5 yrs later. "I want to see the world", this is ,my strongest desires in my life right now or I could say in the past, present and the future as long as my life goes. Not working the best kitchen, not finding my perfect wife, not moving to Australia, not becoming millionaire, not opening my restaurant tomorrow. Right now, all I want is I want to travel to see the world I never seen.
I say it would be so cool if I can keep traveling forever and working different cities around the globe every couple yrs. But realistically saying 45, 50 yrs old chef , do any restaurants around the world willing to sponsor? I don't think so. This means I'm considering right present time to next 6yrs will be my last chance to travel and work around the world. So... here's what in my mind for next 7 yrs >>

2013: CJWDT'13 Mediterranean tour (Greece, Malta, Italy, Croatia, Hungary, Austria, Monaco, Switzerland, Czech Republic, Slovakia, France, Germany, Spain, Portugal, Ireland and UK)

2014: CJWDT'14 mini European tour
2015: CJWDT'15 South American tour
chef de cuisine (South America OR Japan)
2016: CJWDT'16 mini Caribbean tour
executive chef (Australia)
2017: CJWDT'17 mini Oceania tour
2018: Opening P.S.I.

I'd say I'd like to change my job after one year commitment every year, but management position with visa sponsorship, asking one year commitment will be really tough. So from now on, my job commitment will be 18 months to 2 yrs, probably. My commitment with Amber started 11/1/11 and will be last next 18 months. And actually it will make Amber as the longest restaurant I ever worked!
After Amber, I really hope I'd like to work something completely different from French cuisine for sure. I'd love to work Italian or Spanish restaurants, but with no experience in these cuisine, the chance must be slim. But again I'd love to keep traveling and get both life and culinary inspirations next 7 yrs. Looking forward to seeing what HK bring into my life next 18 months. My culinary journey will continue towards opening P.S.I. on 2018...
