
It has been a while since last post... I have been keeping myself busy at Baume. Last one month I was focusing on organize the kitchen. Now I think dry storage, kitchen and walk-in fridge get much more organize. As well I did all the paper works for station responsibilities, order sheet, m.e.p. list and others. And now I think it's about time to start developing new dishes! The picture showing above is my 'secret weapon / gudget', CJ's toy box. Stationary, cosmetic supply, art supply, kids toy, e.t.c.... the tools enable me to break through new gates of my culinary creativity!!
We just recently got one new line cook and I just start working on new dishes time to time and working as tournant during the service . For July menu I presented chef Chemel 15 dishes ideas and have done 4 dishes so far. One dish was changed and on the menu last week and 2 dishes gonna be on the menu this week and 4th dishes is 80% done for next week. So far, so good!
So... where is my new dishes??? I'm currently waiting for chef Chemel post new dishes on the Baume website. Because I wouldn't post & talk about the dish before the official website. Hopefully soon I can start talking about the new dishes I've done for Baume.
Meanwhile I start thinking about new title of the column talking about new dishes. And... I decided the title for this series of new column, it is called "Mergination & inspiration". As you can imagine(?), it means "merging imagination & inspiration" I just like creating new words like develovision, gastromancing saga.... maybe Japanese nature????
Tomorrow we have weekly menu meeting and I'll present 15 new dishes idea for August. I'm planning to present 15 dishes each months(mean I already working on September menu!) and hopefully many of them go on the menu. So.... hopefully this coming up new column "mergination & inspriation" inspire the readers some way!!Labels: M & I
