Mergination & Inspiration: Heirloom carrot 3 ways pt.I

     So... my first month at Baume, I need to compose one vegetable course replacing halico vert course. It was halico vert, shallot vin, aioli, plum & frozen ume rock.  I went to Palo Alto farmers market to see fresh market available and ..... '!'  I decided to make Heirloom carrot dish.

     This dish is composed pretty quick, the position of this course was 3rd course(out of 12) after amuse & soup, so I thought it should be salad.  And I looked up my IPF(Ingredients profiling file) to come up food pairing on this dish.  And.... boom, finished in one day.  

    To let the ingredient, "carrot" speak loud on the plate and get hot spot on the stage, I decided to present it in 3 ways.  I could go on 5,7 ways, but like Mr.Miyagi said "In everything, the balance is the key", so not too simple, not too complicated, carrot 3 ways!  It's kinda classic, Robuchon, Ducasse, French Michelin star, but well... guess it's in my culinary blood!

Carrot:  Definitely have typical roots vegetable "earthy" flavor, yet one of the sweetest roots vegetable, sometimes it need to drew out by sweating, but natural sugar have so much flavor.  The texture of baby carrot is superb, some people may prefer apple to crunch ur teeth into, but I love carrot's gifted crunchiness. And as you see the above, different color of carrot is very vivid & make me wanna grab to make something soigne.

Kale:  I'm not big fan of the flavor, be honest.  And I didn't cook before many times.  Yet...  looks like forest, I must use it.

Orange:  to add on freshness and acidity and pops up carrot sweetness, kind of binder of this dish.

Walnuts:  Kind of bitter nuts, I would say.  But going SO WELL with carrots.  I thought I'll substitute Walnuts to other nuts, but....  sometimes classic stay classic.

Flavor:  carrot, orange, walnuts....  like turbot, brown butter, caper....  just so Excellent.   I like going avant garde flavor profile, but not this time.

Concept:  I want carrot 3 ways and....  I want make CARROT FRITOS TWIST & GREEN CARROT POWDER.  

Title:  straight forward "Heirloom carrot 3 ways"  //  subtitle "Height, tight, airly"

Visual:  as subtitle said "height, tight, airly", fritos twist and green powder.
