P.S.I. agenda as of 11/13/12



One year has passed by since my last post of 'P.S.I. agenda'.  This is my personal agenda for next yrs to come, what I thinking... seeing.... planning next yrs to achieve my goal... opening the restaurant P.S.I. 2018!!

Last post... I was still working at Amber in Hong Kong, I did find my job oversea, beautiful Hong Kong.  But.... unfortunately the job didn't work out for me and....  unexpectedly now I'm in Palo Alto, California, U.S.A.!! It's not the secret that I hate the idea living in the U.S. after 10yrs been here.... especially living in town, I mean  Palo alto...  I HATE IT!!(a bitter smile)  But no job ever be perfect, Baume does have similar structure to the restaurant I want to do(P.S.I.) , so I think I'm in right path to achieve my goal......  Let me hope... and I should have clear answer for this one year later, I'll see....

The following is the my plan for next 6 years till opening the restaurant P.S.I. as of 11/13/12!

2012:  Sous chef@Baume, Palo alto, CA, U.S.A.

CJWDT'12 NYE Mexico tour:  Mexico city

2013: Keep working at Baume, finish 18months(hopefully) and .... CJWDT'13!!

CJWDT'13 South American tour:  Chili, Argentina, Uruguay, Brazil, Paraguay, Bolivia, Peru, Colombia, e.t.c.....

2014: If I get the job in South America, would be nice, but if not....  EU or Asia....  Let's say EU.. 3rd challenge, 2nd vengeance!!  find the job somewhere not in the U.S. as chef de cuisine...

CJWDT'14 Mediterranean tour:  Greece, Malta, Italy, Croatia, Hungary, Austria, Monaco, Switzerland, Netherlands, France, Germany, e.t.c.....

2015: keep working somewhere around the globe, stay for 18months with CJWDT'15 mini tour....  My number one pick would be Taiwan...  Or Capetown(South America) maybe...  Not culinary, but I'd love to go to Egypt... but I should make full scale CJWDT African tour some time....

2016:  time to hit the world again.... say Asian tour, then Australia to find executive chef job!

CJWDT'16 Asia/Oceania tour:  India, Sri Lanka, Myanmar, Laos, Thailand, Cambodia, Singapore, Philippine, Indonesia, Australia)

2017:   Cheffing@OZ and of course CJWDT'17 mini tour!!  Probably New Zealand!



2018:  Opening restaurant P.S.I.


........ yes, crazy man thinking crrrrrrazy thing.... as usual and this weird posting this on public cyber space!  ..... anyway I want to confess something here....  if can make one wish coming true, my only wish is probably not having my 'perfect' restaurant!  This may cause the fact I'm stuck on Palo Alto, boring town....  my biggest dream in my life is seeing all over the world... 195 countries least for now, as of 11/13/12.

This doesn't mean I lost passion in cooking or anything, I have same amount of passion equally into cooking, traveling and heavy metal.  But....  I really wanna travel and see new countries, people, cultures, foods and get inspired.  That really mean a LOT in my life, definitely one of the biggest reasons I live for sure.  So... (a bitter smile) I don't surprise IF I say I decided to keep traveling the world longer not opening P.S.I. on 2018!  Just confessing what actually in my mind... that is it....

ANYWAY I will see where my life* culinary metal journey goes.....   This is CJ a.k.a. culinary metal vagabond......  To opening restaurant P.S.I.  my Gastromancing saga continues....
