CJWDT: Ecuador






..... It has been a while since last post.... AGAIN(a bitter smile)  Well, in fact I left Colombia, went to Quito, Ecuador for a week and Now I'm already in Lima, Peru!!  I supposed to make this post while I'm in Quito, but....  I had a huge issue last one week, I mean I guess I got into serious diarrhea on my 4th days in Ecuador!!  Not sure from where, but...  ceviche? 'that' restaurant? I never went to 'silly' place though...   The guidebook saying watch out the water, could be ice in the drink, lettuce in the salad....  mmm....  all I can say now is I had to cut short my local eat/sightseeing in Quito, it was pity....  The picture above is some shots from my local eats in Quito.

Anyway...  talking about good thing in Quito, I had an awesome opportunity to stage at Casa gangotena restaurant for 2 days.  It was really inspiring experience.  On my first day chef Andres Davila took me to San Roque's market and show me around and gave me tour... it was super cool!!  I also have fortune to learn how they making all different kinds of soups such as fanesca, caldo de papa, quinoa soup..., salsas, marinade for pork....  it was great stage to digging into Ecuadorian cooking.  And to reply their offer, I made quick spontaneous Hot/cold tuna a la Ecuadorian since I was asked to demo somthing.  Think back.... I could do the dish more this, more that, just BETTER, but...  guess it's my nature.(laugh)  Here I'd love to say thank you for chef Davila and the rest of the team for having me, Gracias!!

So.. anyway I'm in Lima now, came here last Friday.  My stomach getting better last few days, but still little..... funny.(urgh)   But the show must go on, I have two stage set in Lima.  Today I'll go to stage at Central restaurant, then tomorrow Malabar.  Hopefully I get lots of new inspirations.   CJWDT: Peru NEXT!!
