CJWDT: Uruguay










Taking ferry then bus from Buenos aires....  Montevideo, Uruguay!  Compared with Buenos aires, Montevideo is a small cozy nice city....  having chilled townie feeling.  The food in Uruguay seems quite similar to Argentina.   Unfortunately I couldn't set up any stage this time.  For local eating I have tried los poetas, chivtos, lehmacun, faina....  and more asado!!

The best bites in Uruguay would go to...  Melon/prosciutto risotto from Tandory restaurant ....... nothing Uruguayan(laugh)! Tandory serving all ranges from cuisines across the globe and I have been interested in the concept.   It was savory risotto with small dice of melon inside topped with slice of prosciutto.  It was well executed and having good flavor.

What interest me about this dish is because I had also the idea of melon 'risotto' with prosciutto on my file.  Well....  but I must say my concept was totally different except flavor profile and title of the dish.  My idea was small shot glass course serve as refresher, composed with fake cold risotto texture of melon 'grain' with prosciutto flake/snow/foam(...figure while play around) though....  Mmmm...  one day I'll make it and post!!  Must find the kitchen first!!!/ laugh

The picture above is 'that' melon risotto and also some craft demonstration at mercado de los artesanos.  As I mentioned on my previous my inspiration post, I'm getting inspirations from all kinds of techniques beyond the culinary field.  Some artist make craft out of carving ice/vegetable, I believe those art / craft techinques could be used in the kitchen.  Forget the preconception, the theory & the common sense, new innovation is born from the innocent mind.......
