9/2/13-9/16/13: Shanghai, China
CJWDT'13 Euphoriania grand tour 17th stop, Shanghai, China! China... as I mentioned several times, Chinese cuisine, grandma of all Asian cuisine is a BEAST!! I just feel this country, people and the cuisine have limitless & bottomless power nowhere I ever seen.... I admire their historical wok & Chinese knife work , millions of variation of seasoning, their drying/curing/dehydrating techniques drawing every last dorp of flavors.... Let's check it out!!
So.. I was in Shanghai over 2wks. I thought I'm gonna keep myself busy, but my 10 resumes didn't bring single stage.... (sigh) So it turns out completely opposite to Helsinki, 2wks just eat after eat! Shanghai have lots to see, eat & visit and I did huge amount of homework as I linked mucho below. So less talk, less write, Shanghai is waiting for you, my brother culinary nomads!!
生煎饅頭 / Shengjian mantou: Whatever people think, my favorite bites over 2wks, been there 3 times!!/laugh Would say best dollar bite ever from 43 countries I ever visited. Crunchy(>>crispy), meaty, fatty, juicy.... Everything I expect from 'great food' is there. I could play around with stuffing, but just speechlessly hands down, serve as it is!
红烧肉 / Hongshao rou: Remind me one of my childhood favorite dish from my mother, japanese "Kakuni"(braised pork belly) But those belly is super duper fatty. Think 3 bites is perfect portion, just like foie gras & A-5 wagyu. If I do some kinda two cuisine fusion, I would pick Chinese & Italian! I just see those two would work perfect just like Japanese & French cuisine. I wanna use this as stuffing for pastas like cannelloni, ravioli, tortelloni & others....
Deep fried chicken gristle: I really think chicken gristle is one of the most underrated protein! There're some items I can't help myself to order if I see on the menu, chicken gristle is one of them just like sweetbread & bone marrow. Deep fried chicken gristle is one of my favorite from typical Japanese Izakaya menu. I really want to put on my menu, maybe mix into gremolata!!
