...... let's start with this before talking anything..... Ladies & gentleman..... Angkor wat, Siem reap, Cambodia!!!
The duomo di Milano, the cathedral of Toleno, La Sagrada familia of Barcelona, and now Angkor wat... It's like monumental living art made by the the braveful architecture x the graduation of sunlight in the sky, the reflection in the pond.... Everything coming together and making art just like dishes is composed by different ingredients. It was phenomenal.
As we all know, the senses towards inspiration is different by each individual. For some people, those pictures don't mean anything.(and professional photographer may call these are shit pictures.) But for me these pictures or the memories triggered by these 'click' my emotions, senses and intelligence(if I have such...) and bring me ideas, images concepts & words.... lots of inspirations in culinary creativity & imagination.
When I was kid, I wanted to be some 'kinda' the artist... because SOUNDS COOL.(dead serious)
In my opinion the artist is alchemist who can transmutte the inspiration into different forms(painting, music, architecture, fashion, design, e.t.c....). And in my case, I can only do that in cooking, cooking is the sole solution to express what I am aside body & words. Although I don't claim myself as a culinary artist.... because my dishes isn't good enough to be called 'art' (and I have cooler the only one title “culinary metal vagabond”.)
Keep it simple n' short, I live for the inspiration and want to inspire people, that is the reason why I live. As I include 'inspiration' in my restaurant name, I want to inspire diners through my dishes. Don't know I can achieve that, but I say that's simply sole reason why I cook, push and learn after yeaaaaars. “Flavor first, taste matter” is first rule in cooking, but I must go further, cooking 'just' great taste food is also sad. Why? Because I'm not a house cook, I'm professional, living for this and cooking with the pride. SO I want to to create my dishes taste great, looks sick, inspire people and the dish have the story/inspiration to tell.
Mmm.... I knew it gonna happen, I lost what I'm talking/writing here from Angkor wat...../ a bitter smile And nothing bout Cambodia, urrgh.... But I leave this way since it's very She Jay. Cambodia munch pictures as follows!!!/laugh >> Stir fried red tree ants, beef with holy basil (CNN 10 dishes should try in Cambodia), banana flower salad, star fruit salad, khmer curry, spring roll, fried rice, cambodian BBQ, amok, some local market pictures including snake fruit I tried first time!!! …. I still have 50ish Angkor wat pics as well.... but some other time..... No munch N' inspiration this time since this post is long enough......
