Mergination & Inspriation: Cauli,Coli,Coco

Final post from summer menu@Journeyman..... Cauli, coli, coco!  This dish was designed to be the vegetarian alternative on 9 course tasting.  I intended to make soup dish since no soupy items were on the menu.  After market research, I decided to use broccoli, broccoli rabe & cauliflower.   Started with "marble" gazpacho idea and sliding over to finalized form, turning point was acidity &broccoli/cauliflower didn't work well for me, so switch over to cream base soup.

Flavor: Started with broccoli & cauliflower and got the idea to add on Coconuts which I never tried before.
Concept: Summer soup dish, 100% vegetarian.... N2T(no waste)
Title: 3 words with rhyme, Number "3" is well balanced in many ways.  All start with C, I like the sound of it.
Visual: green & white, gradation of different greens, dark, emerald, deep, bright......

The idea of coconuts came by the chance.  Backbar(next door bar of Journey) was getting fresh coconuts and "!!", get inspired.  Coconuts elements definitely give "bounce" and "width" in flavor.
All the components are listed as below, but everything is cooked with coconuts(milk, cream, water).  For example Broccoli cream soup & cauliflower gazpacho is made with coconuts milk and broccoli rabe is brushed several timed with coconuts water jelly.  The dish comes little rich, but I think it's perfect for hot sweaty summer with frozen goodies!!




Cauli, Coli, Coco:  Broccoli cream soup, cauliflower white gazpacho, frozen broccoli rock(sponge cake), coconuts glazed broccoli rabe, frozen coconuts tile, tender broccoli stem/small broccoli/cauliflower dressed in coconuts almond vinaigrette, crispy broccoli leaves & green broccoli oil

And... this gonna be final M&G post from my time at Journeyman.  I have made  total 12 dishes including 3 renewal/redesign the items on the menu.  Not bad for 7 weeks(first 6wks I didn't involve menu development, just "observing")  But I must admit my motivation & creativity was far from the best condition and I may wanna say I could make everything much better if the situation was different.  But as a record, I have posted some of the dishes and this is it!  Farewell, Journeyman!
