From Luxembourg towards 'major job market' London, UK.....   Rapid fire, Netherlands, Germany & Belgium!  Nnn...  I came back again these three countries... I'll not be surprise some restaurants recognize my resume like "Oh... this JP guy again...."/ a bitter smile.  The result of this time, couple ding dong over e-mail, 2 interview & 1 stage, one only ONE!!  Knowing my disadvantage (visa, language & no previous working exp. in the country) and job-hunting rely on luck & timing.... this time got the least feedback..... 

The one lucky stage went to  Jean restaurant newly opened by chef Serge Herman(ex.Oud sluis ) in Antwerpen.  The dining room is built inside old chapel, one of the most impressive dining room I ever seen!(http://www.pietboon.com/en/architecture/detail/restaurant-the-jane-antwerp) The kitchen have lots of stagire and packed with intensity throughout the day.  Starting off 8am, get off around 4 am(NOT typing miss, I repeat 4AM!), balls to the wall, no pony or crying baby survive....  remind me my Alinea days.  

I was VERY impressed by the spirit/mentality of all the chefs & dedication to "focus, details & push".  After putting up and being abused working with some amateurs who have no spirit in what they do 'somewhere', I was SO happy to see 'REAL' culinary samurais.  This should be what 'chef' truly means!!  Anyway here I'd like to say thank you again for chef Herman and his culinary troopers with true respect!!
